Pear Harvest

Summer pear harvest today!  We sorted the good ones into crates and dumped the bad ones into the compost.  Our organic pear trees have done so well over the years.   I'll be putting up an army of no-sugar-added, THM "E" style pear sauce this week!

Accidental Casserole, THM-style

I tried to convert the Trim Healthy Mama single-serve pizza mix I bought recently to a family serve and accidentally ended up adding way too much liquid.  It wasn't going to roll out into a pizza dough, so instead, I poured it into a casserole dish and baked it.  Then, instead of pepperoni, I chopped up cooked chicken (about 2 cups), added a jar of low-carb pizza sauce, two cups of Italian cheese, mixed it together and poured it over the crust.  I sprinkled another cup of Italian cheese and baked it for the time it called for.  Topped it with herbal "Pizza & Pasta Magic," and it is probably the best-tasting pizza casserole I've ever baked...the crust really makes it! 

Sunset Walk

The weather has been wonderful lately and so have the sunsets! We're enjoying it while we can.  Next week looks like it's going to get hot!

Off to the Beach

Lake Byllesby used to be full of algae, sharp rocks, sticks, and other nasty debris.  However, it has been recently revamped!  It is SO much nicer now!  Only a 20-minute drive and we can spend some time at the beach!  We got home right before the rain started. 😃

Summer for the Boys

This is the last summer before all my kids are teenagers or adults.  Am I going to make the most of this time?  You bet I am!  Sam & Becca had work and other responsibilities today, otherwise they would have joined us.  We love hanging out at Big Woods!  It's close to home and fun to play in the creek/waterfall. 💚🤎💚

Double Blessing

Eric & Sam helped with the removal of some dead trees on our church property and now we have more wood to chop up for the woodstove this winter. 🔥
