I tried to convert the Trim Healthy Mama single-serve pizza mix I bought recently to a family serve and accidentally ended up adding way too much liquid. It wasn't going to roll out into a pizza dough, so instead, I poured it into a casserole dish and baked it. Then, instead of pepperoni, I chopped up cooked chicken (about 2 cups), added a jar of low-carb pizza sauce, two cups of Italian cheese, mixed it together and poured it over the crust. I sprinkled another cup of Italian cheese and baked it for the time it called for. Topped it with herbal "Pizza & Pasta Magic," and it is probably the best-tasting pizza casserole I've ever baked...the crust really makes it!
